Based on the characteristics of high concentration organic wastewater produced from a soy protein process, a few yeasts and the optimal culture conditions were selected to produce Single Cell Protein (SCP) by soy protein wastewater fermentation. The results of Erlenmeyer flask indicated that Candida tropicalis, Candida utilis, Candida lipolytica, Geotrichum candidum link and Endomycopsis fiburiger could be used and their optimal culture conditions were, respectively, as follows: Potato Dextrose Agar (PDA) medium, initial pH 6.5, 25℃ and 180 runs per minute (r/min) for Geotrichum candidum link; MacConkey medium, initial pH 6, 25℃ and 180 r/min for Candida utilis; PDA, initial pH 5.5, 25℃ and 210 r/min for Candida tropicalis; PDA, initial pH 5.5, 25℃, 180 r/min for Candida lipolytica; PDA, initial pH 6, 25℃ and 180 r/min for Endomycopsis fiburiger.
